Recipe - Fried Rice & Marinated Chicken

This recipe is cooked using Bessemer's 6.0lt Classic Dutch Oven & Lid

Marinated Chicken      

4 Thigh chicken fillets ( Trim off the fat and dice)      
2 tbs.. soy sauce      
2-3 shakes of garlic powder      
1 tbs.. white sugar      
2 tbs.. water

Trim all the fat from the chicken thighs and dice them, then add the soy sauce, garlic powder, sugar & water together, mix thoroughly.  Add the diced chicken and let stand for 1 hour.

Fried Rice      

4 rashes bacon (fat free) diced      
2 large eggs      
Dessert spoon of water      
Dash of yellow food colouring      
3 cups of cooked long grain rice      
1 tbs. Kikkoman soy sauce      
6 spring onions sliced (use the whole onion including the green part)      
2 medium carrots - cut into straw thickness      
Handful of salted peanuts.

Beat the eggs with a fork in a bowl.  Add water & yellow food colouring.  Heat Dutch Oven, add the marinated chicken and cook for 5 - 6 minutes then remove from Dutch Oven.

Wipe the Dutch Oven clean with a paper towel. Beat the eggs with a fork in a bowl add water & yellow food coloring, add egg mixture to Dutch Oven and let it cover the base. Turn as you would a crepe.   Once cooked chop into small pieces with the aid of a Bessemer egg lift.  Remove from the Dutch Oven.     

Add rice and soy sauce to dry Dutch Oven and stir, add chicken pieces, bacon, carrots, spring onions and peanuts

Re - heat & serve.
