Impossible Pie 

IMPOSSIBLE PIE
28cm Frypan & Lid
Teresa Micalizzi

½ cup S/R flour
2 ½ cups milk
4 eggs
125 g melted butter
2 teaspoon vanilla essence
1 cup coconut
1 cup sugar
nutmeg

Mix all ingredients together

Pour mixture in 28cm frypan, cover with lid- vent open

Cook for about 35 minutes on low to medium heat

The mixture separates as it cooks into a base, filling and topping

Serve warm or chilled with fresh strawberries
