Ricotta Pikelets 

RICOTTA PIKELETS
Gourmet Griddle

PIKELET BATTER

2 ½ cups self raising flour
2 cups milk
4 eggs
4 tablespoons of sugar
2 tablespoons vanilla sugar

RICOTTA FILLING

300g fresh ricotta
2 tablespoons sugar
zest of 1 lemon


Mix pikelet batter together in a blender

Mix ricotta with sugar and lemon zest

Heat gourmet griddle to medium

Place tablespoon of batter in griddle

Place a teaspoon of ricotta filling in middle of batter

Cook until bubbles appear, then flip over to brown other side

Sprinkle icing sugar over pikelets and serve
