MONTEREY PIKELETS
Gourmet Griddle

Batter
4 eggs
2 cups S/R flour
1 ½ cups milk
1 tablespoon of oil
salt & pepper
Mix batter 1 hour before using
Filling
300 gm fresh ricotta
½ cup shredded mozzarella cheese
½ cup chopped ham
½ cup chopped parsley
½ cup parmesan cheese grated
salt & pepper
Heat Gourmet griddle to medium
Place large tablespoon of batter in gourmet griddle
Place one teaspoon of filling in middle of batter
Turn over and cook until brown
Serve on a bed of shredded lettuce
